Peppermint Mocha Frappuccino

During the past few weeks when the weather was so unusually warm, I made quite a lot of smoothies for Phil and whomever happened to be helping him with work at our new house. I also made this dairy & sugar-free frappe for myself on a number of occasions, or with regular milk {which in my opinion is still better than any substitute} for those who didn’t need to be eating dairy-free. I hope you find it as satisfying and “dessert-like” as I did. ;)
 

Peppermint Mocha Frappuccino

6 ice cubes
1 shot of espresso or 1/4 cup strong coffee
1/4 cup milk {you can use any non dairy milk as well such as almond or rice milk}
1 tablespoon cocoa powder
1-2 tablespoons honey or agave
1-2 drops peppermint extract, or 1 tablespoon peppermint syrup {I used 1 drop peppermint essential oil when I ran out of extract and it worked well.}

Blend all ingredients in your favorite blender or smoothie maker. Enjoy. Oh, and if you’re like me and looking for ways to give yourself extra nutrition and energy throughout the day, you can always had 1/2-1 teaspoon of a daily boost herba smoothie mix to this drink.

Mmm-mmm. I think I’ll go see about making one right now!

    Now that would just hit the spot today, on this uber lovely spring day. Mmmmm. Except I don’t have peppermint syrup. Perhaps I’ll have to cheat and add a bit of caramel coffee syrup instead…
